Jakarta
In 1966 the government declared Jakarta a special metropolitan district with a status and administration similar to that of a province. Gelatin is a protein substance that comes from the skins and bones of animals. Most people know it as the substance used to make jelly-like salad or dessert. It is not only useful in making these foods, but it is also beneficial to the consumer because of its high protein content. Gelatin is also commonly used in the photographic industry and in making medicinal capsules.
The production process of gelatin is long and complex. Firstly, the grease must be eliminated. Then, the bones are soaked in a solution of hydrochloric acid in order to make them free from minerals and are washed several times in water. Next, the bones are put into distilled water, and then heated to over 90 degrees Fahrenheit for a few hours. After that, moved into new fresh distilled water and heated again at a little over 100 degrees Fahrenheit. A form of fluid comes out from this heating, and it is concentrated, chilled, and sliced. Finally, it is dried. The final form of gelatin is white, tasteless, and odorless.
